Description
Spinach is one of the most versatile and easy to cook vegetables. The trick is to make sure not to overcook it because spinach can quickly turn bitter. Spinach is naturally high in sodium or salt so there is no need to add salt to this recipe. The almonds add a bit of crunch, as well as protein and healthy fats.

INGREDIENTS
- 1 tbsp. olive oil
- 1 tbsp. minced garlic
- 8 oz spinach
- ½ tsp. pepper
- ½ cup slivered almonds
DIRECTIONS
- Heat a large deep pan to MEDIUM HIGH and add olive oil and garlic. Mix until garlic starts to release an aroma.
- Add spinach to the pan and stir constantly until spinach is shiny and dark green, approx. 3-5 minutes.
- Mix in the almonds and serve.
