Nutrients in sweet potatoes are rich in fiber, potassium, and vitamins A and C. They are a delicious accompaniment to any meal. With fortified orange juice, calcium and vitamin D are added to this quick and delicious recipe.

INGREDIENTS
- 1 1/2 cups orange juice
- 1 1/2 cups vegetable broth
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 pinch of nutmeg
- 1 tablespoon olive oil or canola
- 6 medium sweet potatoes (about 3 pounds), peeled and diced
DIRECTIONS
- In a small bowl, whisk together the orange juice and vegetable broth. Add sugar, cinnamon or allspice and salt. Save it for later.
- Pour the oil into a medium saucepan and heat over medium heat. Add the potatoes and sauté them until golden brown.
- Gradually add the orange juice mixture to the potatoes until the potatoes are coated. Cover the pot and let it boil over MEDIUM HIGH heat until the potatoes are soft but firm.
- Serve hot, with sauce over the potatoes. If you like, you can put a bit of cinnamon on top of the potatoes for garnish.
