Quiche is a French term for a tart consisting of a pastry crust filled with flavorful stuffing. Leeks don’t always get the credit they deserve for being anti-inflammatory, high in dietary fiber and vitamins A C and B6.
INGREDIENTS:
- 8 leeks
- Water
- Salt
- 3 cups parmesan cheese
- 3 cups turkey ham, diced*
- 6 large or 8 small eggs, scrambled
- Crust
DIRECTIONS:
1. Clean leeks very well of dirt and/or sand under running water.
2. Slice them thin and pour them in a pot.
3. Cover the leeks with hot water, add salt to taste and bring to a boil.
4. Once the leeks are soft, after boiling for about 10-12 minutes, drain the water.
5. Add the cheese, turkey, and eggs and mix well.
6. Pour mix over crust and bring to the oven at 400 degrees until you insert a toothpick and it comes out dry, approximately 20 minutes.
*For a vegetarian meal you can skip the turkey or use tofu.
