A staple in Latin American food, stewed chicken with vegetables is a dish you can set aside to cook for about 30 minutes while you work on something else. You can serve this dish with a side of rice or mashed potatoes to take advantage of the flavorful juices that will come out of the chicken and vegetables.

INGREDIENTS
- 1 tablespoon oil
- 1 yellow onion, chopped
- 1 tablespoon garlic, minced
- 1 whole chicken breast, cut into pieces
- 3 large carrots, cut into pieces
- 1 green pepper, cut into pieces
- 3 large potatoes, cut into pieces
- 1 15-ounce container of sauce of your choice (mild, medium or hot)
- Salt and pepper to taste
DIRECTIONS
1. In a medium pot, heat the oil over medium heat.
2. Sauté the garlic and onion until the onion is transparent.
3. Add the chicken and turn it every 3 minutes to brown it on all sides
4. Once the chicken is Golden brown, add the carrots, peppers and potatoes.
5. Cover with the sauce and salt and pepper to taste.
6. Cover the pot and boil for 30 minutes or until the potato is soft but firm.
Note: Check that the preparation does not dry out. If it dries out, add half a cup of water and continue cooking.
