Apples and pears provide fiber, vitamins, and minerals. Graham cracker crusts are lower in fat and calories than traditional pie crusts.
INGREDIENTS:
- 20 graham crackers
- 1½ Tbsp. butter
- 1/4 cup water
- 1 tsp. vanilla extract
- ¾ Tbsp. cinnamon
- ¾ Tbsp. brown sugar
- 4 to 6 apples or pears, cored and diced
- 2 Tbsp. lemon juice
DIRECTIONS:
1. To make the crust, place graham crackers in a zip lock bag and crush finely. Set aside ¼ cup crumbs for topping.
2. Melt the butter.
3. In the dish you will serve your tart, mix the graham crackers with the butter. Using your fingers or a spatula, press crumbs into the bottom and sides of dish until you create an even layer. Place dish in refrigerator to chill.
4. In a different bowl, combine water, vanilla, cinnamon, and brown sugar. Add fruit and lemon juice. Mix well to coat fruit.
5. Cook the mixture on the stove at medium-high heat for 12 to 15 minutes, stirring constantly, until fruit softens.
6. Remove crust from refrigerator. Pour fruit filling into crust and smooth with a spoon. Sprinkle remaining crumbs on top, and serve.
