This recipe is for one of those days that you are craving lots of flavor but do not want to spend too much time in the kitchen.

INGREDIENTS
1 small whole wheat bread roll
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon oregano powder
2 cups spinach
1 tomato, sliced
4 slices mozzarella cheese
DIRECTIONS
1. Preheat oven to 350 degrees Fahrenheit.
2. Cut the bread in the middle, and lengthwise, to obtain 4 pieces.
3. In a glass, mix 2 tbsp olive oil, vinegar and half a teaspoon of oregano.
4. Moisten the inside of each piece of bread with this mixture.
5. In a skillet over medium heat, add the remaining olive oil, garlic, and spinach.
6. Sauté the spinach until it is bright green. Remove from heat and drain.
7. Cover a quarter of the bread with half the tomato, half the spinach, 2 slices of mozzarella cheese
8. Close your sandwich with another quarter of bread
9. Repeat steps 7 and 8 to make the next sandwich
10. Place the sandwiches on a baking sheet and cook for 10 minutes in the oven. If you don't have an oven, you can use a greased skillet on the stove. Leave the sandwich for 7 minutes on one side, then turn it over and let it brown on the other side for 5 more minutes. You can also enjoy the sandwich cold.
