Couscous Salad

Description

Couscous is an ancient grain rich in protein and a great source of iron, calcium, and fiber. It’s easy and quick to cook and can be the base for many dishes, including salads and other sides.

Makes 5 servings

Ingredients: 

  • 1 cup uncooked couscous 
  • 1 cup vegetable broth, boiling hot 
  • 2 cups diced cucumber (1 to 2 cucumbers) 
  • 1 small red onion, finely minced 
  • 2 cups diced tomatoes (1 to 2 large tomatoes) 
  • 1 cup red bell peppers, diced
  • 1 cup radishes, chopped
  • 1 avocado, peeled and diced 
  • ½ cup cilantro leaves, chopped 
  • 1 Tbsp. red wine vinegar 
  • 2 Tbsp. lime juice 
  • 3 Tbsp. olive oil 
  • Pinch of pepper 

 

Directions: 
1. Rinse couscous in cold water, using a strainer. Place it in a heat resistant container and add hot broth. Cover pot loosely and let sit until all broth has been absorbed. 
2. Remove, uncover, fluff up the grains and set aside. 
3. In a large bowl, combine the rest of the ingredients. Stir to mix well. 
4. Add couscous and mix again. Serve room temperature or cold.
